Cabo San Lucas: Day 2, Beach, Booze, and Flying Home

After a long day in the sun, we headed back to the hotel. Had some lunch, jumped immediately in the pool skipped the twenty minutes you're supposed to wait after eating, and had some drinks at the pool bar. Honestly, I think I drank more this weekend then I've had over this year combined! After we lounged at the pool for a while we headed back to the room a little later and got ready for dinner.

After dinner we headed into town. First stop was El Squid Roe, then Knotty, lastly the Pink Kitty. El Squid Roe, I recommend. I had a blast there! The music was great, the drinks were good and the vibe was awesome. Knotty wasn't so great, it's small and was overly crowded. It was a bit more of a bar scene then club, and even though I'd much rather be at a bar then a club - when I'm out clubbing I want to dance, not stand around and talk. Pink Kitty was fun, I would've liked it a lot more had it not been the last stop of the night. We were all exhausted at this point and I was ready to pass the f out.
 There were a few too many "older gentlemen" standing around, drunk.
 They were filming something at Knotty, but we couldn't find out what. 

For our last day, we spent the day on the beach and the afternoon on a booze cruise to watch the sunset.
I've come to realize, I love sailing. I didn't feel sea sick on the boat (once I got off, and got to the hotel, I felt crazy light headed due to the alcohol and sudden motionless of land, I passed out for the night) and it was complete blast!

On our last day in Cabo, one of the girls and I headed into town in the morning to go shopping for souvenirs before the shuttle came to pick us all up and bring us back home.

Cabo Cabo: Hotel and Day 1

I'm back! In case you didn't know none of you knew since I forgot to post my "carry on essentials: Cabo edition" on Thursday, I was in Cabo San Lucas this weekend! I left Thursday right after class, headed to the Tijuana airport and flew off to Cabo for the weekend with Kalani and her family to celebrate a few birthdays.

We landed Thursday afternoon, headed to our all-inclusive hotel the SolMar. The hotel itself was amazing! It's sitting right on the Pacific Ocean, with thundering loud waves, beautiful pools, great food and everything's free (the food, the water bottles, the drinks, all inclusive)!

On our first full day in Cabo, we got to go on a boat and check out the famous arch! But before we got to the arch, our captain took us to a little beach area where we got to go snorkeling, paddle boarding, and kayaking. The water in Mexico is incredibly warm and so clear! We were all a bit scared at first, thinking of sharks of course, but once you're in the water with everyone (we were a group of thirteen), sharks didn't even cross my mind! All I wanted to do was swim with the fish, and everyone kept saying that I was just like a fish in the water.

In any case that someone reading this is heading down to Cabo, check out Cabo Adventures, it's totally worth it! They have great packages and you aren't getting ripped off!

And then we headed to the arch!

After the boat ride, we walked around the marina and checked out the shops. Stayed tuned and come back tomorrow to check out the other two days I was in Cabo!

To try and figure out which of 384 pictures I should upload to this post was unnecessarily difficult. Not only did I take way too many pictures, but I didn't take any ootd pictures. I'm a bad fashion blogger, I know... But considering I did take over 300 pictures, probably a little more over 400 because I started deleting some after posting them to Facebook!

Time to Play Catch Up

because I'm pretty far behind! Weekend recap on a Wednesday? Why not, as long one gets posted when needed! 

My weekend recap starts on Thursday, like always. Thursday I ran out to Play It Again, Sports in PB and about myself a wetsuit, as motivation to definitely get my butt out on those waves this summer! (which I have by the way, more later!) I went to the beach after my purchase and got myself a crazy tan line. When I finally got home I sent out another order from my shop AguasAzules on Etsy.

Saturday// I went to the mall with my brother and his girlfriend, my cousin and her boyfriend, and my other cousin - my other cousin and I played 5th/6th wheel! But hey, we got froyo so it's all in a day's work.

Sunday// Was the World Cup! Finally. The World Cup honestly took way too long to get here. Out of Argentina vs Germany, I had to cheer for Argentina. I watched the game with Kalani and her family, we had a big bbq, and even though Argentina lost, it was a good day!

Monday// I WENT SURFING. It was incredible, I honestly can't describe the feeling at all. If I try I'll sound like a record player saying it was absolutely incredible, like floating/flying, and just unbelievable. I caught seven out of nine waves, yes I was counting, and can't wait to get back out there as soon as I can, as you can probably tell from my overly excited face in the picture below!

After surfing, I went to work, then to karaoke night with my coworkers. All in all, it was a great weekend.

Mango Barbeque Chicken

Sunday night I decided to turn to Pinterest to figure out what I wanted to make for dinner. I chose this recipe and I laaave it! It's a lot better then I expected, but my mom and I changed up the recipe a bit. The only real difference is that instead of grilling it like the pinterest recipe says to do, we sauteed it. Next time, I'm definitely grilling it. Tonight it was just way too hot to try and stand by a grill!

What you'll need, all from the original recipe:
  • 1/2 cup of ketchup
  • 1 tbsp chipotles in adobo (removing the seeds and chopping up the chipotles will help reduce the heat a bit!)
  • 1 quarter of a fresh mango, peeled and chopped.
  • A little juice or water
  • 1 clove of garlic, minced
  • 1/2 cup of cider vinegar (I used regular vinegar instead of cider vinegar)
  • 1 tbsp molasses
  • 1/4 cup of brown sugar
"In a blender, combine the peeled & chopped mango with a little juice or water. I used mango juice, but you could easily use a splash of OJ or just plain old water. Puree and then pour into a medium saucepan."

"Add the rest of the ingredients to the saucepan and mix well.
Simmer over medium heat for 5-7 minutes, or until the sauce has reduced and thickened a bit."

This is where I changed up the recipe a bit. Again, instead of grilling it I sauteed it. So, instead of brushing the sauce onto the chicken and then throwing it on the grill, I let the chicken marinate for about an hour while I ran to the AT&T store and then sauteed it until it was fully cooked.

 And for the rice...I didn't pay much attention to the recipe but this is just about what we did.

  • 2 Cups of White Rice
  • 4 Cups Water
  • 3 Cloves of Garlic
  • ¼ Cup Extra Virgin Olive Oil
 In a medium pot heat up the olive oil, then set in the rice. Add garlic, bell peppers, and onions for great taste! Pour in the water and stir the rice a bit. Let it boil and do not boil again, turn heat down to a medium level and leave covered. Cook for about fifteen or twenty minutes, or until the water has been absorbed (I usually let the rice sit until it absorbs the water), and then you're done!
