Time to Play Catch Up

because I'm pretty far behind! Weekend recap on a Wednesday? Why not, as long one gets posted when needed! 

My weekend recap starts on Thursday, like always. Thursday I ran out to Play It Again, Sports in PB and about myself a wetsuit, as motivation to definitely get my butt out on those waves this summer! (which I have by the way, more later!) I went to the beach after my purchase and got myself a crazy tan line. When I finally got home I sent out another order from my shop AguasAzules on Etsy.

Saturday// I went to the mall with my brother and his girlfriend, my cousin and her boyfriend, and my other cousin - my other cousin and I played 5th/6th wheel! But hey, we got froyo so it's all in a day's work.

Sunday// Was the World Cup! Finally. The World Cup honestly took way too long to get here. Out of Argentina vs Germany, I had to cheer for Argentina. I watched the game with Kalani and her family, we had a big bbq, and even though Argentina lost, it was a good day!

Monday// I WENT SURFING. It was incredible, I honestly can't describe the feeling at all. If I try I'll sound like a record player saying it was absolutely incredible, like floating/flying, and just unbelievable. I caught seven out of nine waves, yes I was counting, and can't wait to get back out there as soon as I can, as you can probably tell from my overly excited face in the picture below!

After surfing, I went to work, then to karaoke night with my coworkers. All in all, it was a great weekend.

Mango Barbeque Chicken

Sunday night I decided to turn to Pinterest to figure out what I wanted to make for dinner. I chose this recipe and I laaave it! It's a lot better then I expected, but my mom and I changed up the recipe a bit. The only real difference is that instead of grilling it like the pinterest recipe says to do, we sauteed it. Next time, I'm definitely grilling it. Tonight it was just way too hot to try and stand by a grill!

What you'll need, all from the original recipe:
  • 1/2 cup of ketchup
  • 1 tbsp chipotles in adobo (removing the seeds and chopping up the chipotles will help reduce the heat a bit!)
  • 1 quarter of a fresh mango, peeled and chopped.
  • A little juice or water
  • 1 clove of garlic, minced
  • 1/2 cup of cider vinegar (I used regular vinegar instead of cider vinegar)
  • 1 tbsp molasses
  • 1/4 cup of brown sugar
"In a blender, combine the peeled & chopped mango with a little juice or water. I used mango juice, but you could easily use a splash of OJ or just plain old water. Puree and then pour into a medium saucepan."

"Add the rest of the ingredients to the saucepan and mix well.
Simmer over medium heat for 5-7 minutes, or until the sauce has reduced and thickened a bit."

This is where I changed up the recipe a bit. Again, instead of grilling it I sauteed it. So, instead of brushing the sauce onto the chicken and then throwing it on the grill, I let the chicken marinate for about an hour while I ran to the AT&T store and then sauteed it until it was fully cooked.

 And for the rice...I didn't pay much attention to the recipe but this is just about what we did.

  • 2 Cups of White Rice
  • 4 Cups Water
  • 3 Cloves of Garlic
  • ¼ Cup Extra Virgin Olive Oil
 In a medium pot heat up the olive oil, then set in the rice. Add garlic, bell peppers, and onions for great taste! Pour in the water and stir the rice a bit. Let it boil and do not boil again, turn heat down to a medium level and leave covered. Cook for about fifteen or twenty minutes, or until the water has been absorbed (I usually let the rice sit until it absorbs the water), and then you're done!

Summer Lovin' Goals

I'm always setting goals. I like shooting for the stars and dreaming big, even if I know it's a far-fetched idea. I like the idea of dreaming big and making plans, it keeps me busy and hoping for a fun future. The fact that it's also already July, middle of summer, means we've got all summer long to do what we want! Well, I'll have to balance my goals with school and work but I'm planning on keeping busy, as often and as much as possible.

I got the idea for this post from London, over on London Like the City, she's a San Diego blogger too. I just recently found her blog and I'm insanely in love! I love finding new blogs to read, but I love bloggers in my area even more! Oh the possibilities...

Anyway, back to the goals.
  • Become a cocktail server. Right now I work as a cashier, but it's a seasonal position. I'm hoping and definitely hinting/fighting for a cocktail server position for the fall/winter!
  • Read more. I'm currently reading Zelda by Therese Anne Fowler, it's really good! I definitely recommend it. However, I want to read more books before the fall semester starts. Because once school starts I'll be too busy studying and doing homework/projects. 
  • Continue to say yes more often. I've done pretty good at kicking my anxiety to the curb lately, and I want to keep that up. I'm in a better place with how less and less often my anxiety tends to kick in and I'm happy. I want to keep that up!
  • Pay more attention and put more effort into Aguas Azules. Aguas Azules is my brand new etsy shop! I'm selling starfish clips, earrings, and other ocean/beach related items. You can click here to check out what I've got in store, literally, and I'll be posting sales and sneak peaks to new items on le blog!
These are my main goals. Other then making lots of mullah ( $$ ) this summer so I can pay for future school supplies and possibly move into my own place, go to Cabo with Kalani at the end of July, go to my mom's hometown in August for two weeks, and hopefully rent out a beach house for my birthday week at the end of August!

Like I said, I like to dream big.

The Madness of the Fourth!

The fourth of July this year was great. I haven't had such a good time on the fourth of July since about four years ago when I spent it in Miami with Kalani. But this year, this year was priceless. I woke up late and headed to the beach to hang out with some family friends. I skated there, hung out with the fam, and bonded even more with my two new little cousins that my aunt adopted.

After about an hour of hanging with the kids, I headed to work. I'm pretty sure I skated a good three miles on the fourth of July. And I have the tennis shoes tan lines to prove it. 

Sweating, tired, and hungry. I worked for about six hours, then headed home with my coworker Dannielle (Danny) to get ready for a different coworkers party. We headed to the party and it was one of the best times I've ever had. It was such a fun night that the only pictures I took that night were of Cannon, the dog below, because he wouldn't stop barking at us all night. But alas it was a pretty damn good night.

As my Irish friend would say, I got "turnt" on the fourth of July. I was pretty sure that I was just tipsy, but considering I couldn't walk in a straight line and I was actually dancing, it's safe to say, I was turnt. But the night was worth it. I love hanging out with my coworkers outside of work. And since I haven't always been the best at being a social butterfly, alcohol tends to help. Bringing Danny around to officially meet everyone, since she's new to the job, was great too considering she's the definition of a social butterfly.

So after a night of drinking, talking, hanging out with coworkers/friends, holding hands under the fireworks, meeting new people, and drinking my night away (which really wasn't much drinking considering I'm such a lightweight!), I experienced my first hang over the next day too. Guess I hadn't realized how much I drank on the fourth until it was all coming back out of me in the employee bathroom. It wasn't as bad as I expected but let's just say I won't be drinking for a few days.

Saturday was spent recovering, blogging, and catching up on my DVR'd shows. Sunday was spent running errands and shopping. I never knew how realistic "more money more problems" was. I got paid this past weekend plus another lump of money came in for me and I've been shopping way more then I should have!

The clothes on the left I got for a bargain at Ross, three crop tops and a tank for under $32! AND HOLLISTER HAD A 50% OFF SALE. I don't shop at Hollister very often but when I walked by the store with my mom she said, let's just check it out. Of course, it was a big mistake. I headed straight for the clearance area in the back found nothing but the little bralete then found the jeans section. Holy goodness, even worse idea. I haven't tried anything on so I might be returning some stuff, but it was all too cute to leave behind!
